Hyphen or no hyphen?

THESE TWO PARAGRAPHS come from the same story, and, in fact, were back-to-back. Neither is totally correct.

Walter Jones – Regarded as maybe the greatest left tackle of all-time, this is a gimme.

Junior Seau – Another all-time great at his position who’s longevity of production will not go unnoticed in his first year.

Jones wasn't one of the greatest left tackles of all-time; it should be all time. Also, I'd replace the comma with a semi colon.

But, yes, Seau was an all-time great at linebacker.

By the way, in the Seau paragraph, it should be whose, not who's.
